Ingredients

  • 1.5 cup whole wheat flour
  • 1/2 tsp. salt
  • 1 cup brown sugar
  • 1 tsp. baking soda
  • 1 cup canned pumpkin
  • 1/2 cup extra virgin olive oil
  • 2 large eggs, beaten
  • 1/4 cup water
  • 1 tsp. cinnamon
  • 1/2 cup walnut pieces (optional)
  • 1/2 cup raisins (optional)

Directions

Yields: 8 Servings

Time: 60-75 minutes

Preheat oven to 350°. In a medium bowl, mix together flour, salt, brown sugar, and baking soda. In a large bowl, mix together the remaining ingredients.

Gently stir the dry ingredients into the liquid ingredients. Be careful to not overmix. 

If using a non-stick or stoneware loaf pan, use olive oil to grease the sides of the pan. Pour the batter into the prepared loaf pan. Bake 50-60 minutes or until a tester comes out clean, checking at 50 minutes to make sure the loaf is not cooking too quickly. 

Cool slightly in the pan before removing. Cool completely on a wire rack before slicing.
